Highland Park 2004 21 Year Old – Still in Cask is a rare, mature single malt that has spent 21 years developing depth and complexity. The nose opens with hazelnut coffee, rum and raisin fudge, dark chocolate orange and heather honey, all lifted by a subtle dusting of gristy barley. On the palate, spicy heather honey, white pepper, and cinnamon evolve into sweet raisins, dried fruits, and salt caramel toffee, creating a rich, mouth-coating experience. The finish is balanced and rewarding, with lingering raisin sweetness, soft spice, and a touch of leathery smoke.
